Don't delete the CF layer, when everything you don't want is highlighted press the delete key.
You're not deleting the layer, just cutting off what you don't want.

sorry that just doesn't work for me. do you have one of those video record things e.g. fraps. if so can u record a video of you doing it, i just can't seem to do it even when following your instructions
edit: done! i was clicking on the layer and pressing delete, instead of just pressing delete. even now though i can't get it so ONLY the rear hatch has CF, not the whole back. is there a tool that makes this easy? when i use the wand it just selects the whole top of the back section.

That's one of the occasions where your Wireframe comes in handy. Using the 'Free Select Tool' (looks like a lasso) follow the shape of the boot on the wire frame, you can tell the panel gap as it has 2 or 3 parallel lines on the wireframe. Basically just click on the end of each line. Then just cut as above. Very rough example:

Cool, keep going! Once you know these things they're pretty quick to do and applicable to all sorts of other things (I do a lot of replaced panels etc)

Have a look around the LFS forums as well as the LFS database (don't have a link off hand, a google search should find it) and you should find something to suit your tastes.

quick thing... where do i save the .dds file? and also how do i use them in game (i take it i save them to the dds folder

Yeah, put them in the 'dds' folder, not 'skins_dds' (I'd back up the ones they're replacing first) They should appear in game.
You probably know already but only you will see these and you will see them on all cars as they are read locally.

should i save it as XFG_interior1? ive got it as interior3 atm.

Don't change the file name it should be named just like whatever you're replacing 'XF_Interior1.dds' for example.
As I said, dds files are read locally, not hosted like the car skins. Your LFS will use whatever XFG interior is on your hardrive for all XFGs in the game.
